As I become a more seasoned home cook, I have discovered something. The best meals are not fussy at all. In fact, it is quite the opposite. Usually with a few basic ingredients, a well stocked spice cabinet, and 30 minutes you can create something magical that you, your friends, and family will love. My Rotisserie-Style Chicken Skillet Dinner is the perfect example of that.

Okay, so I totally forgot to take a picture of the ingredients. I know you love those, and I am sorry. Here is what you will need to get started.

Rotisserie-Style Chicken Skillet Dinner:
*Prep Time: 10 min *Cook Time: 30 min *Difficulty: Easy *Servings: 4-6

Ingredients:

  • 4-6 Boneless, Skinless Chicken Breasts
  • 1 Bag of Frozen Broccoli Florets
  • 1 c Quick Cooking Farro
  • 1 Onion, diced
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Thyme, dried
  • 1/4 tsp Salt
  • 1/4 tsp Paprika
  • 1/4 tsp Chili Powder
  • 1/4 tsp Black Pepper
  • 2-3 Tbsp Extra Virgin olive Oil
  • 2-3 Tbsp Butter
  • Shredded Parmesan Cheese

To begin you will need to prepare your quick cooking farro.

You can totally use rice for this meal, but be brave! Try something new. I know you will love it!

Season with 1 tsp of salt.

Now you will need to combine all of the spices into a small bowl.

This is where all of the great flavor in this dish are going to come from. Obviously we don't have time to rotisserie a chicken, but we can get those same great flavors by utilizing our spice cabinets. It really is the secret weapon of any kitchen.

Season your chicken, liberally, on both sides with your rotisserie seasonings.

Now you will need to dice your onion.

Anyways, I digress. Back to the recipe. lol

You are going place a skillet over medium; high heat and add the oil and butter.

The butter adds flavor and the oil helps raise the burn temp of the butter.

Now place the seasoned chicken into the pan.
Cook for 4-6 minutes. You will know it is time to flip when the meat turn white half way up the breast as demonstrated here.

Now flip and cook another 3-4 minutes until the juices run clear and the chicken is no longer pink.

Remove the fully cooked chicken breasts from the pan and place on a plate to the side.

Now add the onion to the pan and cook until soft and translucent.

PS-Look at how perfectly dice they are! I love that cutter.

Once the onion is soft and translucent, add the frozen broccoli florets.

Season with salt and pepper.
Cook until the broccoli is no longer frozen and cooked to your liking, about 10 minutes.

We like ours al dente, but you make like it totally soft.

Now add the fully cooked farro to the pan.

Give it a stir.

Then place the chicken breasts on top.

I like to sprinkle a little shredded parmesan cheese on top and place it under the broiler to melt.

Rotisserie-Style Chicken Skillet Dinner:

  • 2-3 Tbsp Butter

Directions:

  1. Prepare the quick cooking farro according to the directions on the package and season with 1 tsp of salt.*
  2. In a small bowl combine the garlic powder, onion powder, dried thyme, salt, paprika, chili powder, and pepper.
  3. Season the chicken, liberally, on both sides.
  4. Place a skillet over medium/high heat and add the better and olive oil. Allow the pan to get hot.
  5. Once the pan is hot place the seasoned chicken breasts into the pan and cook for 4-6 minutes on each side until the juices run clear and the meat is no longer pink.
  6. Remove the chicken from the pan and add the onions. Cook until soft and translucent.
  7. Add the broccoli and cook until thawed and you desired texture, around 10 minutes.
  8. Season with salt and pepper and stir together.
  9. Place the chicken on top.
  10. Sprinkle with cheese and place under the broiler to melt.
  11. Serve and enjoy!

*You can use rice in place of the farro if you desire.
