The foods you bring into your home are the ones your family will eat. It sounds rather obvious when written like that, but when I think about how I can choose between buying a package of snack cakes and a package of low-sugar granola bars, it really makes sense. Which one would I rather have my kids eat for a snack? If I have apples and raspberries ready to eat in my fridge, will we eat more fruits?

A few weeks ago, my husband Brian and I decided to spend the weeks leading up to Easter being as healthy as we could by eating better and trying to get more exercise. The thought was that this might help get us back into a healthier lifestyle! To me, living healthy is about making good choices for your body, mind, and soul. It isn’t only about eating right, getting enough sleep and exercising. It is also about family and friends, religious beliefs, being thankful for all that I’ve been given, and finding pleasure in the small things in life.

Life is so busy, but as far as meals go, I know that we eat better when I plan ahead. I bought Healthy Choice Cafe Steamers Top Chef Crustless Chicken Pot Pies to have available for a quick meal. I also bought things like string cheese, fruit, and veggies. One of my favorite things to do with veggies is to cut and wash them right away. Then, they are ready to eat when anyone in the family opens the fridge looking for a snack!

I find that I often skip lunch or grab something like a bag of popcorn because I am busy. This time, I put southwest salad from a kit into a bowl while microwaving my Healthy Choice frozen meal. It was easy to do and only took about 5 minutes to prepare.The meat and veggies are in a steamer basket, and the sauce is in the bowl below. You microwave the meal and then pour the steamed food into the sauce bowl and stir. It was a delicious, healthy meal with chicken, dumplings, carrots, corn, peas, and pot pie sauce!

I got some carbs, protein, fiber, and so many veggies all in one meal. Although I drink too much diet pop, I’ve been increasing the amount of water I drink and have had a glass of water with my lunch. Later in the day, one of my best friends came over, and we went for a walk together. Getting exercise with a friend is a great habit to get into and something I need to work on. Doing it with a friend not only holds you accountable for showing up but also makes the time pass so much quicker because you have someone to chat with.

How To Make Sugar Free Cake Mix Cookies

For dessert, I made sugar free chocolate chip cake mix cookies, which I turned into Greek frozen yogurt cookie sandwiches. Mix together cake mix, oil, eggs, and chocolate chips. Use a small cookie scoop to make uniform-sized balls of dough. Flatten balls with the bottom of a glass and bake for 7-9 minutes.

In addition to buying the frozen meals, I also purchased Healthy Choice Dark Fudge Swirl Greek Frozen Yogurt. There are 3 individual cups in one package, and each cup is only 100 calories!

Once the cookies have cooled, make a Greek frozen yogurt sandwich. There was enough dark fudge swirl frozen yogurt in one of the cups to make 3 cookie sandwiches.

Yes, they taste as good as they look! My kids came home from school and immediately tried a sugar free cake mix cookie sandwich. They loved them and had no idea they were eating 100-calorie Greek frozen yogurt!

Ingredients

  • 1 sugar free cake mix
  • 2 eggs
  • 1/3 cup canola oil
  • 1 cup sugar free chocolate chips
  • Greek frozen yogurt

Instructions

  • Preheat oven to 375°F.

  • Mix together cake mix, eggs, oil and chocolate chips.

  • Use a small cookie dough scoop to make uniform balls of dough on a cookie sheet.

  • Flatten dough balls with the bottom of a glass.

  • Bake at 375°F for 7-9 minutes.

  • Once the cookies have cooled, spoon Greek frozen yogurt onto one cookie and add another cookie to the top.

  • Gently press on the two cookies, squeezing them together to make the sandwich.

  • Wrap sandwiches in plastic wrap and store in the freezer until ready to serve.

    It’s great that you’re trying to be healthy and I’m sorry to say this, but these things aren’t healthy at all. The cake mix, even though sugar-free contains partially-hydrogenated vegetable fat (just as bad as trans fat), maltitol, sucralose (artificial sweeteners), artificial flavorings etc. You really are better off making the mix yourself, using flour, whether white or wholegrain, honey, stevia or even brown sugar. You can also make a much healthier frozen greek yoghurt yourself with just plain yogurt, some fruit and honey.
    I apologize if it is not my place to say this, but I see you really are trying to make healthier choices and I hate seeing how the industry is trying sell their products as healthy.
