How To Make Keto Reuben Sandwiches

These sandwiches can be made in two simple steps. I’ll show you how to make the bread first, then how to put together the reubens.

Make Keto Bread

  • Prep. Gather the ingredients you’ll need to make bread: Wholesome Yum Keto Bread Mix, butter, eggs, and milk.

  • Cream butter. Use a stand or hand mixer to cream butter until light and fluffy. This helps to incorporate air into the bread, forming desirable air pockets.

  • Add eggs and milk. Make sure these ingredients are at room temperature or they will solidify the butter.

  • Prep. Let bread cool completely, then slice into 1-inch slices. Spread butter on each slice of bread (one side only!). Flip over so butter side is facing down.

  • Assemble. Top the un-buttered side of bread with corned beef, cheese, sauerkraut, and thousand island dressing. Top with another slice, with the butter side facing up.

  • Cook. Add sandwiches to pan and cover with a lid. Cook until cheese is melted, bread is toasted, and fillings are heated through.

TIP: Cook in batches so you don’t crowd the pan. If it gets too dark, turn down the heat.

For the bread:

  • 1 package Wholesome Yum Keto Bread Mix
  • 6 tbsp Butter (unsalted)
  • 4 large Eggs
  • 3/4 cup Unsweetened almond milk

For the reuben filling:

Instructions

Bread:

  1. Make white keto bread according to instructions on the keto bread mix package. (See step-by-step photos in the blog post.) Cool completely, then slice into 1/2 inch slices.

Reuben Sandwich:

  1. Spread 1 teaspoon (5 grams) of butter onto each slice of bread.

  2. Flip 8 slices of bread so the butter side is facing down. Top each slice with 2.5 ounces (71 grams) corned beef, 1 slice swiss cheese, 1/4 cup (35 grams) sauerkraut, and 1 tablespoon (15 grams) thousand island dressing. Place the leftover slices of bread on top of each sandwich, with the butter side facing up.

  3. Heat a large skillet over low heat. Add sandwiches and cover with a lid. Cook for 4-5 minutes per side, until cheese is melted and toppings are heated through. Continue in batches until all sandwiches are cooked.
